Technology Title:Indigenous Processing of Cheese
Description:The origin of cheese making is lost in unrecorded history. However, there is evidence to suggest that cheese was made as far back as 7000 BC. There are numerous references to cheese making in the Bible while the writings of Homer and Aristotle indicate that cheese was made from the milk of cows, goats, sheep, mares and asses. Around 300 AD, trade in cheese between countries especially on sea routes became so great that the Roman emperor Diocletian had to fix maximum prices for the cheese. Cheese is made in almost every country of the world. Compared with the quantities produced in Europe and North America the amount of cheese produced in Africa is quite small, however, production has increased and about one-third of milk is used for this purpose. The cheese produced in Africa is made on a small scale and generally at farm level.
